Some storage tips -keeping your potatoes fresher for longer
The correct storage of potatoes can have a big influence on the taste and can extend the freshness of your potatoes.
Ideally you want to store potatoes in a cool, well ventilated place. Potatoes should not be refrigerated as this causes the potato's starch to convert to sugar, resulting in a sweet taste and discolouration when cooked.
Avoid storing potatoes in areas that reach high temperatures for example below a kitchen sink or next to a large appliance. Potatoes should also be stored out of direct sunlight as this will cause the potato to start greening and will activate the sprouting process.
The green discoloration of the skin is caused by a chemical called Solanine which causes a bitter taste and can cause illness if eaten in large quantities. These potatoes can however be eaten if the green sections are cut out before cooking. Sprouts are a sign that the potatoes are trying to grow, and can also be cut out before further preparation and cooking.
